Really quick bean soups

I must confess that a friend started me on this idea and I branched off...
Black bean soup
1 can black beans, drained
1 can chicken stock (low sodium)
3 T salsa or to taste
hot pepper sauce to taste
Garlic paste (optional)
Mix together in pot. Remove some and blend with a hand blender and return it to the pot to thicken if desired. I also add a little masa (not really a SB ingredient) which thickens it and gives it a wonderful corn flavor. It also works great not doing any of the thickening steps.
Curried garbonzo
1 can garbonzos, drained
1 can artichoke hearts in water, drained and chopped (you can leave out too)
1 can chicken stock
3 T salsa or to taste
hot pepper sauce to taste
curry powder to taste
garlic paste (optional)
Mix everything excpet the artichoke hearts. Remove some to blend and return to pot to thicken. Add artichoke hearts. heat and serve.

The best part is that you have soup in five minutes. And it is pretty tasty!
Lisa.

Lisa,
Thanks for posting as I am also looking for easy soups to make. But, just to make sure I understand as the curried garbanzo bean soup does sound interesting....
You use Mexican salsa? I have never heard of that in combination with curry. Just want to make sure I understand correctly before I attempt this.
TIA,
Amy
Yep. I was surprised too but I really liked it. I used something like Pace Picante. Give it a try.
Good luck!
Lisa.
Thank you Lisa!
I got home from work last night and my DH hadn't started anything for dinner yet. He's not feeling well, so he just wanted cereal. I wanted something quick and filling. I remembered your post, ran to the computer and printed these off.
The Curried Garbanzo Soup was AWESOME! The only thing I added was some left over hummus that I had in the refrigerator that needed used up.
It took me longer to log in and find the recipe than it did to make it (dial up....YAWN).
THANKS again for a great dinner!
