I made this last night & dh loved it.  It has a very simple, basic flavor to it & even though the broth is thin - it is very filling.  Went really well with a side salad & took only about 30 minutes from start to finish.  It ended up simmering for a while after it was done (dh was stuck in traffic) but soup is always flexible!
I got the recipe from the Food Network - the Everyday Italian show - a looong time ago & just never made it.  I came across it when I was menu planning & had to make very little changes to make it SBD friendly.  Hope you like it as much as we did!


Mini Meatball Soup - P2/3
2 tablespoons extra-virgin olive oil
1 carrot, peeled and chopped
2 ribs celery, chopped
1 small zucchini, diced
1 medium onion, chopped
2 bay leaves, fresh or dried
Salt and freshly ground black pepper
1 pound ground turkey
1 egg, beaten
2 cloves garlic, minced
1/2 cup grated Parmigiano-Reggiano
1/2 cup ww bread crumbs,
1/2 teaspoon ground nutmeg
6 cups chicken broth
2 cups water
1 1/2 cups dried pasta, (broken fettuccini or ditalini - something relatively small)
In a deep pot over medium heat add oil, chopped carrots, celery, zucchini, onions and bay leaves. Season with salt and pepper. Cover pot and cook veggies 5 or 6 minutes, stirring occasionally.  While the veggies cook, combine meat, egg, garlic, grated cheese, bread crumbs, salt, pepper, nutmeg.
Uncover your soup pot and add broth and water to the pot. Increase heat to high and bring soup to a boil. When soup boils, reduce heat a bit and start to roll meat mixture into small balls, dropping them straight into the pot. You are making meat dumplings that will cook in the broth. When you are done rolling the meat, add pasta to the soup and stir. Cover and simmer soup 10 minutes. Adjust your seasonings as needed.  Serve hot & sprinkle each bowl with additional grated Parm if desired.

I didn't even think about the breadcrumbs & the pasta combined...think this will have to stay an "on the side" soup for us!
