This was awesome and very easy to make...

**********

Chicken with Sun-Dried Tomatoes and Artichokes

9 oz frozen artichoke hearts, thawed
1/3 cup sun-dried tomatoes, cut into thin strips with kitchen shears
8 oz sliced fresh mushrooms
1 T minced garlic
1 T dried oregano
¼ t kosher salt
½ t black pepper
¼ cup white wine
2 T water
2 t crushed red pepper
2 lb skinless, boneless chicken breasts, fat trimmed

Combine all ingredients except chicken in slow cooker. Stir to thoroughly combine. Add chicken to mixture and stir together. Cover and cook on low for 8 hours.

I found them at Publix (my favorite grocery store) in with all the other frozen veggies. They were packaged in a small box just like the other veggies. I can't remember what brand I found though. The Publix I shop at is pretty small, so I'm assuming that any larger grocery store would carry frozen artichoke hearts. Not sure about Wal-Mart... I have to travel pretty far out into the 'burbs to find a Wal-Mart, so I don't shop there often. Good luck!

In my area they are a hit and miss thing - some of the big stores carry them, some don't. My Ralph's has them (which I believe is the same as Kroger in other parts of the country?) but my Albertson's, Vons, and Walmart Super Center do not. The Stater Brothers 1 block from me does not, but the Stater Bros. 3 miles from me does! So it seems pretty random in my area!

To get all my shopping done I have to go to at least 6 stores as no one store carries everything I need! (one has fat-free cheese, one has sugar-free syrups, one has sugar-free fudgscicles, etc.) I have to keep a list in the car of who carries what so I remember where to go when I am out of something (at first I would forget and have to try 3 or 4 stores before I got the right one!)

I keep telling dh I am going to open a "South Beach Diet" grocery store so I can shop in one place LOL!

Oh, man! I guess I'm spoiled here. I do go to a few different stores, only because I'm looking for a specific brand or quantity. For example I like Kroger's store-brand yogurt, so I'll go there every now and then just for yogurt. And I buy meat in bulk, so I get that at Sam's Club. But for the most part, I can find everything I need/want at the Publix in my neighborhood. I could even walk there... the trouble is getting back home with a week's worth of groceries!

Hi, does anyone know if this can be made with canned artichokes? I have a can that I haven't been able to find the right recipe to use, and this sounds really good!

Thanks!

This recipe looks so great, but as a crock pot newbie, I have a silly question.

The trick is to start off with frozen chicken breasts.
