Just a lurker posting my favorite snack or side dish!
Broiled Bell Peppers
Cut the tops and bottoms off of a bell pepper, I prefer red and yellow ones. Cut pepper into one inch chunks and arrange skin side down in a close cluster on broiler pan. Sprinkle your favorite seasoning (I like blackened seasoning) then toss a few chopped black olives over them. Cover with shredded low fat mozzarella cheese. Broil until cheese is melted. Eat with fingers or fork. The peppers will be softened a bit but still crunchy.
