Baked veggie "chips"

Susan asked me to post my recipe for baked chips, but since I don't have a recipe I'll just post my best attempt at the how to.

Basically, I take a veggie such as sweet potatoes or carrots. Slice it thin, maybe 1/4 " or less. If you have one of those nifty mandolin slicers (which I don't!), that would be ideal. Spray a baking sheet with cooking spray. Put the "chips" in a single layer on the sheet, then spray the top of the veggies with more spray and salt. Kosher salt is especially good. Bake at 400 for anywhere from 10-30 minutes, depending on how thick they are sliced and the moisture content, so keep an eye on them. When they start to look brown on one side, flip them over and salt the other side, then bake until they look done, which is just a tad beyond golden brown. Total cooking time for my oven is usually 25 minutes.

Now this isn't exactly a science in my oven. At best, I get crispy chips. At worst I get something more akin to toasty outside, and a potato-y inside. Either way they taste good! Careful not to burn them though.

This also works pretty well on the Foreman grill if you want them faster! :)

Thanks for posting the recipe. I will definitely try these. This reminds me of a baked potato wedges recipe I forgot about! One of Oprah's old chef Rosie for Cajun baked potato wedges. By substituting sweet potatoes or other vegetables it should be SBD friendly.

Spray baking sheet
Cut sweet potatoes/vegetables in wedges
Beat two egg whites in bowl
Add cajun spices (or whatever spices you like)
Add potatoes to egg mixture and stir to coat
Bake until crisp turning once.
(I'm not at home but will check tomorrow for the oven temp and exact baking time)
