Easy Cheesy Broccoli Bake

YAY! My bf has a "Mr. Food" cookbook, and I found this tonight. We made it, and it was super yummy. I modified it to make it SB-friendly :) It is so easy to prepare, and then all you have to do is stick it in the oven. It is big enough to generously feed at least four people as a side dish.

On a good note, 1.5 pounds of broccoli is two 12-oz. bags of Broccoli-Wokly. At my supermarket, it costs 20 cents more than a bunch of regular broccoli (so 40 cents more total), and it already comes pre-cut as florets, which saves time and wasted veggies. Not to mention you can steam it in the bag in the microwave (puncture the bag and nuke it for 5 minutes), which is great for the kitchen-impaired like me. The steamed broccoli smelled so good when it came out of the microwave, we were tempted to just eat the broccoli as-is.

Also, I forgot to "lightly grease" my baking dish (read: spray it with Pam), and it still came out fine. No major mess. Anyhow, here is the recipe:

Easy Cheesy Broccoli Bake

1.5 lb. fresh broccoli florets
5 large eggs, lightly beaten
1 cup low-fat cottage cheese
1/2 tsp. salt
4 slices bacon (or turkey bacon), cooked and crumbled
1/2 cup (2 oz.) low-fat shredded cheddar

1. Preheat oven to 350 degrees.
2. Steam broccoli and place in a lightly greased 7" x 11" baking dish.
3. Combine eggs, cottage cheese, salt, and bacon, stirring well.
4. Pour mixture over broccoli and bake at 350 degrees for 20 minutes.
5. Sprinkle with cheddar and bake 5 more minutes.
6. Let stand 5 minutes before serving.

Ok so I made the easy cheesy broccoli bake tonight. It wasn't bad, but it needs a "kick" to it. Know what I mean? If I had hot sauce I would have put some on it. I'm not much of a cook, but I am getting there. Does anybody have suggestions on what I could add to the recipie to give it a little "kick"?

Alright, I'm Italian and what I see missing is onions, garlic and hot pepper flakes.

Hi Amber,

When I posted this, I forgot to mention that I added salt and pepper to it when it was on my plate.

But I think some onions and/or garlic would add some flavor to it. Maybe garlic salt?

I made this as a side dish for supper the other night and really liked it although I liked it better as leftovers for breakfast the next couple of days. Thanks for sharing the recipe with everyone.

Try a pinch of cayenne pepper. That is what gives a delicious macaroni and cheese that subtle "bite" that makes it so good.

Thanks for the recipe! I have a bunch of brocolli in my fridge that I might try this recipe with.
