Spinach Stuffed Sole
1 t olive oil
8 oz sliced fresh mushrooms
8 oz chopped fresh spinach
1/4 t crushed oregano
1 clove minced garlic
1.5 lb sole fillets or other white fish
2 T sherry
1 c grated part-skim mozzarella cheese
1. Preheat oven to 400 degrees.
2. Spray a 10x6 baking dish with nonstick cooking spray.
3. Heat oil in skillet; saute mushrooms about 3 min or until tender.
4. Add spinach and continue cooking about 1 min or until spinach is barely wilted. Remove from heat; drain liquid into prepared baking dish.
5. Add oregano and garlic to drained sauteed vegetables; stir to mix ingredients.
6. Divide vegetable mixture evenly among fillets, placing filling in center of each fillet.
7. Roll fillet around mixture and place seam-side down in prepared baking dish.
8. Sprinkle with sherry, then grated mozzarella cheese. Bake 15-20 minuts or until fish flakes easily. Lift out with a slotted spoon.

I made this for dinner last night except...
- I used tilapia instead of sole.
- Instead of rolling the fish I just put a layer of fish on the bottom, then the veggies, then another layer of fish and topped it with the mozzarella.
- I don't have any sherry around the house and I wasn't going to buy a whole bottle just for 2 tablespoons, so I just skipped that part.
It was yummy!
