Glazed Bell Peppers & Snow Peas

I found this recipe in the SBD cookbook. It was delicious and crunchy! It went well with grilled chicken breasts that were marinated in a sesame, ginger marinade. It would also go nicely with Asian Chicken Patties (I'll bump this recipe if anyone is interested).
Glazed Bell Peppers & Snow Peas -- Phase 1
Ingredients:
3 cups snow peas or sugar snap peas
2 T water
1/3 c balsamic vinegar
1 tsp splenda
1 tsp evoo
1/2 large red bell pepper, cut into short strips
1 clove garlic, minced
s & p to taste
Directions:
Place snow peas in microwaveable bowl with water and cook on high for about 5 minutes or until crisp-tender. In small saucepan, bring vinegar and splenda to a boil. Stir constantly until it reduces to about 2 Tbs. Remove from heat. Cook pepper and garlic in oil in large skillet until crisp-tender. Add snow peas. Add vinegar and salt and pepper to taste.
