Crockpot Hoisin Chicken
A wonderful set-it-and-forget-it meal...very easy to make...and what a taste!

4-6 servings
5 hours 5 minutes 5 mins prep




3
lbs chicken pieces (I use boneless breasts cut in chunks)

1/4
cup hoisin sauce *

1/4
cup sugar-free apricot preserves 

1/4
cup soy sauce

1
piece fresh gingerroot, thinly sliced

1
lime, juice of

3
tablespoons cornstarch


salt and pepper (optional)

1-2
clove fresh minced garlic (optional)



  1. Mix all ingredients in a bowl (except the chicken pieces).
  2. Add the chicken to the mixture; coat well.
  3. Put all ingredients in the slow cooker.
  4. Cook on low for 5-6 hours.

*I use Whole Foods 365 Organic brand of hoisin sauce.  Only 3 grams of sugar per serving.

I would use the same cooking time for frozen breasts.

This was such an easy recipe and sooo delicious! I served it to dinner guests Friday night. I recommend using frozen chicken breasts and cooking on low closer to the 5 hour mark. I added snow peas and red pepper strips strips during the last 45 mins of cooking. I served it over brown rice. My guests liked the sauce a lot. I really liked the depth of the flavor but next time I am going to making it spicy hot. I like more heat! LOL! Thanks for posting the recipe and I will be making this again!
