Honey substitute??

I have a great recipe off of the Kashi cereal box for muffins but the recipe calls for 1/4 cup honey what could I use instead???

Hmmm, maybe Splenda? What I would be worried about is that honey is 20% water, so usually when you substitute sugar for it you have add some moisture somewhere else, so I would think it would be the same if you subbed with Splenda. Not sure how you could do that. In my pre-SBD days if I was subbing sugar for honey I would usually add a couple tablespoons fruit juice to make up for the moisture - but obviously that would be out.
Not much help huh? Funny, my favorite cooking show (Good Eats) was about honey last night and he was talking about how to do the opposite - substituting honey for sugar in baking.

Maybe a sugar-free pankcake syrup? Is it the recipe off the Good Friends cereal? I'd meaning to look at it and see if it was workable.

Yes, I would definitely substitute sugar-free maple syrup.
