Breakfast heaven.... ,mmmmmm

Oh my heavens! (Can you tell I'm a foodie?) I'm not sure how many of you are aware of my favorite way to use leftovers... I chop it up and pour eggbeaters over them and whoo-la a delicious, easy breakfast. Well... This mornings creative delight was to chop up leftover SHRIMP Fra Diavolo and the leftover Italian green beans & roasted eggplant from that meal. Here's the Shrimp Fra Diavolo thread.

Mmmmmm... that sounds good! I am a big fan of "stuff" in my eggs, too. This morning I had chopped up Boca sausage, zucchini and a bit of feta cheese. Yummy!
We have some leftover stirfry veggies that I'll have to try your technique with. :)
