Sugar Free Peanut Butter Fudge

OK, so I worked on the fudge recipe again and it's presentable now...although any additional suggestions for improvement are very welcome :-)
CAUTION: Although there is no sugar in this recipe, it should still be considered an occasional treat because it is not low-fat!
Ingredients:
1 cup natural peanut butter
1/2 cup butter or the equivalent amount of your substitute of choice
1 tsp vanilla
Splenda (several cups, see note below)
Microwave butter/substitute and peanut butter on high, covered with vented plastic wrap, for one minute.
Remove from microwave, stir to combine, microwave for another minute (covered with vented plastic wrap).
Remove from microwave with hot pad or oven glove, it gets really hot! Remove plastic wrap, stir, and add vanilla and Splenda until fudge begins to thicken and stick together. NOTE: I can't give you an exact amount of Splenda here, it will depend on how oily your peanut butter is and how thin your butter substitute is when melted. I used about half a box. Once your fudge begins to become a paste, mix thoroughly for a couple of minutes.
Traditional fudge should be stirred until it loses it's shine but because of the peanut butter oil, mine never did, but once it began to feel more grainy and less wet I smoothed it into an 8 x 8 square pan and stuck it in the fridge for about two hours. It set up nicely...it's very sweet, but satisfying to have just a small square.

Or you can take a tablespoon full (or two) of natural peanut butter, one packet of splenda, a dash of vanilla. Mix them all together and then lick off the spoon. ROFL!!
(I did this once when I was getting ready to make my peanut butter yogurt for dessert and then discovered there wasn't any yogurt.)

Shan, thanks for posting this recipe!! I found some Splenda on sale last week and now I am very glad after hearing that this recipe takes almost half a box. lol I will have to try it soon though I think I am a little binged out right now on sweets after yesterday. ;o)
