Ideas for Red Split Lentils?

Hi all,

Over Thanksgiving, after a long discussion about the benefits of SBD and having lots of fiber in your diet, my bf's sister-in-law gave me a bag of red split lentils since they are high-fiber and, well, yummy. (She is a healthy vegetarian, super active, and has done all this nutritional research, and she figured out that SBD is probably the healthiest "diet" you can come up with. She just eats lots of tofu instead of meat.)

I generally stick to simple things in the kitchen, partly because of ability and lack of great kitchen equipment (no crockpot) but mostly because of time (I'm a law student), but I was looking online for recipes with this ingredient with no success.

Does anyone have any SBD-friendly recipes that include lentils (or red split lentils in particular)? I have no ideas, as I am not particularly creative in the kitchen, and I feel really bad because I am going to see her in a couple of weeks and would like to say that I used the lentils she gave me :)

Any help is appreciated. Thanks!

Now where did you find that recipe? I tried and tried to find recipes with split lentils and was not able :(

Hi Becca,
Here is a recipe I got from hillbillyhousewife.com. This is a simple and very tasty soup.

Lentil Pottage

2 tblsp olive or other oil
1 large onion, chopped
4 stalks celery, chopped
2 tblsp minced fresh garlic (or 1 tsp dry)
1 & 1\2 cups dry lentils
2 quarts water
4 to 6 chicken bouillon cubes
salt and pepper to taste

Heat the oil in a large pot. Add the onion, celery and garlic. Saute until the onion is translucent. Add the lentils, water and bouillon cubes. Bring the mixture to a boil. Reduce heat and simmer the pottage over medium heat for about 45 minutes, or until lentils are nice and tender. Taste the pottage and add salt and pepper to taste. Enjoy!

Funny you should post this today. I was leafing through my SBD cookbook this morning looking for inspiration before I went grocery shopping. I found a recipe for "Chicken and Red Lentil Soup". Well, I looked all over the grocery store and could only come up with regular lentils which, I am sure, will be fine. I will make it later this week and post a review. If you would like me to post the recipe, let me know.

I think it would work as a thickener in chili?

Whenever I am faced with a new and interesting food I'd like to try, I search for it on About.com. Enter any ingredient in the search engine and they will have an explanation of the food and bunches of recipes. Here is the page for lentils...

What?!? Gasp! No crockpot?!? They make life so much easier! Next time you are at Target (or WalMart, or Sears, or K-Mart, etc.), you should pick one up. They are only about $20-30. You don't need one with fancy switches and programming capabilities. All you need is "Off", "Low", and "High". Oh yeah, and make sure it has a removable crock. Most of them do, but I'd hate to see you end up with one that doesn't!

The red split lentils I have came from a specialty grocery store, like an Indian food or Middle Eastern food store. I plan on hitting the local Middle Eastern grocery store soon to make my own hummus :)

Also, I will definitely check out a crock pot and will be sure to make sure it comes apart for easy cleaning!

Hi, don't have anything to add about the lentils, but just wanted to say that you don't have to go to a Middle Eastern Grocery store to make your own hummus! I get everything at just a regular store:

canned chickpeas (garbanzo beans)
tahini (sesame butter - usually next to the peanut butters and other nut butters)
lemon juice
olive oil
garlic

That's all it is! I whiz it in the food processor or blender. Super easy and way better than any of the store bought I have tried! I don't have the proportions handy, but type "hummus recipe" in Google and you will get tons of recipes!
