Just went to the Cheesecake Factory and has a slice of their 6 carb. (don't have a clue of the calorie content) cheesecake. It was the best, so yummy and light. I was told that the crust is not graham cracker but crushed walnuts...soooo good. Does anyone have such a recipe? I'd be ever so grateful. I could order a whole pie on line for $40.00 for 14 slices, but I was thinking that surely someone on SB board would come up with something???!!!!! ;-) Thanks a bunch!

This is a low-carb product that is not appropriate for South Beach.

I love cheesecake too. I know that it has alot of fat though and like someone else mentioned not really ideal for the sbd. However, if you are going low carb and not following sbd to a tee than i found a real good receipe for a cheesecake. It has no crust, is made with cream cheese and ricotta cheese(i've used light cream cheese). It is actually really good considering it is low carb..it's made with splenda. I've topped it with fresh berries and everyone raved about it. It can be found at ...http://www.foodtv.com/food/recipes/recipe/0,1977,FOOD_9936_27072,00.html
Hth. I know this is one of those things that we should really stay away from, but if you are entertaining and want to have something that all people including low carbers or diabetics will enjoy than this is a great receipe. HTH SUzanne

Holy saturated fat, Batman! 18 grams per serving! 299 calories... Yikes!

Hey,

Before I mention anything, I just want to say how funny everyone is on this board. I love the saturated fat comment ;)

But anyway, someone posted way back when a recipe for Nuclear Cheesecake. You make it with light cream cheese, and it is crustless if you want it to be. I made it in a glass pie dish in the microwave, and it turned out great. Way too yummy :) I am going to make it one of these days, as I now have the cream cheese, and I also have a microwave with a turntable, which makes it MUCH easier to cook. I have the recipe on my other computer, so I can't post it, but you should search for it.

Also, what about a ricotta cheesecake? My family is Italian and that was a staple at our house (personally I don't like them quite as much, they tend to be grainier, but its better than nothing!) I know my grandma basically used ricotta, sour cream, eggs, sugar and lemon zest in the filling and the crust was mostly nuts (usually pinenuts with some other nuts thrown in) - though I am sure there was butter in the crust too!
I will have to go look and see if I can find her old recipe somewhere - I bet it could be fairly SBD with some tweaking.

On the Cheesecake Factory - My MIL who *claims* to be doing SBD (she really is doing something closer to Atkins, but she won't admit to it!) has the Cheesecake Factory low-carb cheesecake all the time thinking she is being SO healthy! I tried to tell her....but you know how MIL's are! I figure next time we go dh and I will just split a piece of the real thing since its only a once in awhile kind of thing!

Hi,
I found the nuclear cheesecake recipe and was just wondering if anyone knew what the measurement of a packet of splenda is. I always buy the big bag, not the packets.

TIA

Hi Brandi,

One packet of Splenda = 1/4 teaspoon

Like I said, not sbd friendly but good tasting none the less for a diabetic or someone doing low carb living. Like i suggest you could use the light cream cheese, milk instead of cream, or even all riccotta if you please. This receipe was not posted to say it was low in saturated fat..just a better alternative for a low carber or diabetic. Cheesecake iregaurdless of how you make it is never REALLY healthy..that's probably why so many including myself love it so much.lol Anyhow, take the receipe for what it is worth. Suzanne

If the "big bag" you are referring to is the granular Splenda... the kind that measures "cup for cup" with sugar... then one packet equals 2 teaspoons of granular. A packet of Splenda (or Equal, or any other artificial sweetener) has the sweetness of two teaspoons of sugar.
