Salmon skin???

Salmon skin???

I just bought some salmon fillets on sale, but I've never cooked this before! I will be using a grill pan on my stove.

They have skin on one side. Do I leave this on to cook? If not, is there an easy way to remove it?

Mel,

Yes, leave the salmon skin on while cooking as it helps to keep the fish moist. When cooked, use a spatula and you will be able to serve the fish without the skin. I buy salmon filets without the skin, it is a little more appealing to me.

Do you have a Cost-co near you? They sell great salmon - very flavorful without being too fishy and a great price per pound. It is sold as a very large piece which I cut in half and freeze. Each portion is enough for a family of 4!!

Thanks for the tip! I'll have to bum along with my mom next time she goes to Costco.

I did cut the skin off before I cooked, but it still stayed moist. I brushed it with melted Olivio (olive oil spread) and sprinkled with cajun seasoning, then cooked in my cast iron grill pan. DH raved about it!

There is a great fish recipe in the SBD cookbook which calls for orange roughy - I use salmon and it is DELICIOUS! It is in a scallion ginger sauce and I serve it with stir fry veggies.

I will either bump it (if I can find it) or re-post it below in the recipe section. Give it a try and let me know how you like it.

Mel I'm not sure if this has been mentioned yet, but when you cook it and use the spatula, the fish just separates from the skin
