Meal Plans anyone? Share yours!

Ok here goes mine...


This week's soup - - That awesome Lentil soup I've posted in the past.  But there's a chance I may not get to it until the weekend unless I can squeeze it in tomorrow afternoon.


Side dishes:  roasted eggplant, broccoli, zucchini (not all together).  Caesar salad, spinach salad.  Sliced raw cukes, red pepper.  Might make baked brown rice.


Monday:  portabella mushroom cap "pizzas" - kids:Purdue fun chicken shapes - All: baby spinach salad & sliced cukes. 


Tuesday: Homemade curried chicken salad on romaine (unless eaten for lunch).  If we do, veggie frittatas (cheese omelets for the kids).


Wed: Leftovers


Thursday: Corned Beef dinner at Uncle John's church - I'm hoping the veggies are edible.


Friday: tilapia almondine or other seafood.  :)


Saturday:  We may be going out for my husband's birthday tonight.


Sunday: We have broom hockey on Sunday night, so dinner needs to be light.   Shoot - I'm drawing mind fog here...  Chef salad, soup I think.

Getting back to my meal planning - so this is a great post Susan!

Monday: gingered chicken breast with asian stir-fry veggies.

Tuesday: marinated london broil with roasted mushrooms and asparagus.

Wednesday: chicken capri with spaghetti squash.

Thursday: balsamic chicken - side dish ??

Friday: cost-co rotisserie chicken, salad

Saturday: might be having company for dinner - osso bucco, risotto, fennel & orange salad. Not very SBD friendly ;(

Sunday: cajun shrimp, cucumber salad, maybe some brown rice.

My (phase two) dinner menu for this week...

Monday: Shrimp Fra Diavolo over spaghetti squash with Insalata Caprese

Tuesday: chicken stir-fry over brown rice

Wednesday: broiled tilapia topped with salsa with tossed salad and cheesy zucchini

Thursday: Boca burger with tossed salad and steamed broccoli

Friday: leftovers (if there are any) or I'll reheat one of my frozen soups

Saturday: crock-pot veggie beef stew

Dinner is almost always accompanied by a slice of whole wheat sourdough or pumpernickel, unless I'm already having a grain.

Breakfast consists of 2 hard-boiled eggs or cottage cheese and tomato juice.

Lunch is usually a salad topped with protein (turkey, tuna, canned chicken, etc.)

Snacks include: yogurt, cheese, apple w/ pb, celery w/ hummus, Triscuits & cheese, popcorn, sf banana pudding, and sf popsicles

Here's mine for the week:

Monday: Cheeseburgers, sauteed spinach

Tuesday: Cajun Shrimp, spinach, cucumber salad

Wednesday: Mixed seafood arabiata (maybe over ww pasta), green salad

Thursday: Spanish rubbed chicken, cheesy zucchini

Friday: Steak au Poivre, spinach

YUM! You may see a spinach theme here - I bought a 2.5 lb. bag at Cost-co!

Hi Susan!
Actually, I think I meant 'seafood fra diavolo'(but I think arabiata is basically the same thing! LOL!)
I recently found this great product in the frozen seafood section of my grocery store. It is a bag of mixed seafood called "Northern Chef Seafood Medley". It contains shrimp, calamari, mussels and clams. It is a 16 oz. bag and is only about $4. All you do is defrost and then toss it with your favorite tomato sauce. I either use my own sauce or a Ragu No Sugar Added sauce and then add a bit of red pepper flakes to spice it up!
