These were a huge hit with my kids.  They had theirs on hamburger buns.  I had mine on top of spaghetti squash.

Crockpot Cheeseburgers

INGREDIENTS:

  • 1 1/2 pounds lean ground beef
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • 8 ounces Light Velveeta cheese, cubed
  • 2 tablespoons skim milk
  • 1 green bell pepper, chopped
  • 1/2 cup chopped onion
  • 1 large clove garlic, put through press or chopped fine
  • 8 sandwich buns, split and toasted (Whole wheat)
  • pickles, mustard, ketchup, relish, tomato slices, onion slices, or other condiments and toppers

PREPARATION:

In a large skillet over medium heat, brown ground beef with garlic powder and black pepper until beef is cooked through. Drain off excess fat and transfer beef to a 3 1/2 to 5-quart crockpot. Add cheese, milk, green bell pepper, chopped onion, and pressed garlic to the beef. Cover and cook on LOW for 5 to 7 hours. Serve the beef on toasted sandwich buns with an assortment of condiments.
Makes 8 sandwiches

Yeah, I definitely think my crock pot is too hot! Actually I don't know if its too hot, its just its a 6 qt one, so its normally meant to have A LOT more stuff in it - I'm learning that small recipes tend to get over cooked/dried out.
I was dumb and left it on while the kids and I went to the movies, just to see what would happen with it - well when we got back EVERYTHING in there is BLACK - lol! And the house smells like its on fire :-) Oh well, the crock pot is soaking now...it may have to soak a week!
I should probably get a smaller crock pot for some recipes, I love the big one for big roasts and big batches of chili, but smaller would work better for a recipe like this.

I think I may just try it again tonight and do it on the stove in a skillet kind of "hamberger helper" style and see how it turns out. I'll let ya know!

crockpots need to be at least 1/2 to 2/3rds full to work the way they were meant to.

Thanks, yeah crockpot was WAY too big (the stuff didn't even fully cover the bottom of it!) I will have to get a smaller one for these kind of recipes.

I did end up remaking it in just a skillet on the stove and it turned out great. I browned the meat w/the onion, pepper and garlic, then covered and let it cook about 10 min til the onion and pepper was tender. Then I added the milk, cheese, covered it and let it sit til the cheese melted and mixed it in. It was really quick and easy...really did remind me of Hamberger Helper! We had it on whole wheat buns, my ds ate two LOL!

Thanks for your detailed version of how you did this in the skillet.

Dumb cooking question here!

Does anyone know if you can put the hamburger meat into the crockpot raw?

TIA,

you CAN put raw ground beef in the crock pot...however, the grease that you would normally drain off has no where to go. I would caution you to only use the absolute leanest ground beef or to brown it first and drain off the grease. I actually brown ground beef in big quantities, then drain it, then rinse it with hot water to make sure all the grease is off, then freeze it till I need it for tacos, sloppy joes, chili, etc.

hope this helps

Hmmm.....

I have a REALLY busy day tomorrow - NYC for an all day meeting and then commute home to my 12yo's championship softball game, plus my 16yo is studying for finals so she isn't available to help much.

I am looking for an 'easy out' (haha - softball pun!) for dinner. I probably shouldn't chance this recipe since any fat would be mixed with the milk and cheese - ick.

Thanks for the heads up, you're right.
