Crockpot Spicy Beef Roast

3 lb round tip roast or trimmed brisket
1-2 T cracked black peppercorns
2 cloves garlic, minced
3 T balsamic vinegar
1/4 c reduced-sodium soy sauce
2 T Worcestershire sauce
2 t. dry mustard

Rub pepper and garlic onto roast. Put in crock pot. Make several shallow slits on top of roast. Combine remaining ingredients and pour over meat. Cover, cook on low 8-10 hours or high 4-5 hours (6 to 8 servings).

How "spicy" is spicy? I'm a wimp when it comes to hotness & my family isn't big on heat either (small kiddos).

Right, it is not "spicy" like Mexican, it just has a nice bold flavor.

No, I used regular pepper because I did not have the other kind

I'm usually so bad at cooking meat--I have no sense of when it's done cooking and I'm terribly paranoid about undercooking, so not having to guess is great for me.
