¼ CUP OLIVE OIL
2 MED SIZE ONIONS, CHOPPED
4 GARLIC CLOVES, MINCED
1 LG EGGPLANT, SEMIPEELED, CUT INTO 3/8 CUBES
3 MED SIZED ZUCCHINI (2LBS)
1 TEASPOON SALT
½ TEASPOON GROUND PEPPER
3 YELLOW/RED BELL PEPPERS, CUT INTO CUBES
28 OZ CAN DICED TOMATOES WITH JUICE
1 TEASPOON DRIED THYME
1 CUP WHOLE KERNEL CORN

In Dutch oven, heat oil over medium heat.
Cook onions about 5 minutes, Stir in garlic, eggplant and zucchini; add salt, pepper and 1 cup water. Cover and simmer 5 minutes. Stir in bell peppers, tomatoes and thyme; bring to boil. Reduce heat. Cover; simmer, stirring often, until vegetables are tender, up to 40 minutes. Add corn for last 5 minutes.
