Oatmeal Chocolate Chip Cookie Recipe

Oatmeal Chocolate Chip Cookies

1 C land-o-lakes soft baking butter
1 C splenda
2 eggs
1 t vanilla
1 c oat flour
½ cup whole wheat flour
1 t cinnamon
½ t nutmeg
½ t sale
3 c whole grain oats
1 c semi-sweet mini chocolate morsels

Preheat oven to 350
Beat together butter and splenda until creamy
Add eggs and vanilla – set aside
Combine oat flour, whole wheat flour, baking soda, cinnamon, netmeg, and salt together – add to butter mixture – mix well
Stir in oats and chips – mix well
With hands, roll rounded teaspoons and drop and flatten onto parchment paper lined cookie sheet, bake for 10-12 minutes
Cool on paper towels

BTW, I made these to serve with dessert last Easter. My non-SBD family members described them as doggie biscuits! But we SBD-ers have a more refined palate attained from eating whole foods!!! LOL!!! Try them.....

They are a little chewy and a little dry. I would compare the cookie more to a cereal bar. Don't try to eliminate the chocolate chips, though, because they really offer some flavor and moisture that the cookies need. Hope you enjoy them!

Thanks for the recipe!

I made something similar a couple of monthes ago, I added some Simply Jiff Peanut butter, it is lower in sugar than regular peanut butter, it helped them not be quite as dry. I also added some flax seed to get some more fiber.

Thanks for the great ideas sb-slim! Although I really like these cookies, I am sure they can be improved! LOL!
