I had the best dinner last night!!

Have you tried the Stir-fry Chicken and vegetables? Its listed in the SB book in the Phase 2 meal plan. OMG, was it GOOD!! And easy!  I had the left overs for lunch today....mmmmm, does not even feel like a diet, yes, I love it!


If you don't have the book here is the recipe:


3 tablespoons canola oil (I used extra-virgin olive oil)


1/2 pound cooked chicken breast, cut into strips


1 package (10 oz, but I used 16 oz) frozen vegetables containing broccoli, green beans, red peppers, and mushrooms. (I even added onion, since I LOVE onions)


2 tablespoons water


2 tablespoons soy sauce (used kikomann lite)


1 package (10 oz) fresh spinach (I did not add this)


 


Heat 1 1/2 TBS of oil in skillet and stir fry the cooked chicken strips. remove chicken and set aside.


Add 1/2 TBS of oil and stir-fry frozen veggies for about 4-5 mins. Return Chicken to pan, add water and soy sauce and stir-fry for another 3-4 mins. and its done.


If you want to use the spinach then add the spinach, cover and steam for 4-5 mins.


I had a salad with it and it was the perfect meal!
