I threw this together over the weekend and it turned out great! I'm going to try it with lemon next time.

4-serving package of sugar-free lime jello
8oz package of light cream cheese (neufchatel)
3T fat-free half 'n half
2T vanilla
2t cinnamon
3 packets of Splenda

1. Prepare the jello as directed on the package. Chill in the fridge until syrupy, but not set.
2. Put everything in the blender and blend until smooth.
3. Pour into individual serving cups and chill until set.

Makes 8 half-cup servings - 75 calories apiece.

This sounds YUMMY!! I wonder if it would work with ricotta cheese?

- It'd be worth a shot! I like the creamy taste from the cream cheese, but I think ricotta would make it a little lower in calories.

As a matter of fact, I often mix sugar-free jello powder into ricotta, non-fat plain yogurt

Yes, you can substitute fat free cream cheese for the low-fat variety.

Thanks cathy! I am debating whether to make it with ff cream chese or ff ricotta. I have no idea which way to go because i NEVER eat cheese (don't like it) so i don't know what the difference would be or how it would effect the recipe. I think i will like the finished product despite the cheese content. I understand about the ricotta counting as a protien (although it has more cals than ff cream cheese) but if i use ricotta larger portions can be served... either way i'll let you know how it turns out, i hope to make it some time this week.
