Crockpot Coq au Vin

Coq au Vin
Phase 1
Makes 6 servings
Ingredients
6 5-ounce boneless skinless chicken breasts (can be frozen)
1 1/2 cup chicken broth
3/4 cup red wine
4 ounces sliced mushrooms
4 slices cooked turkey bacon, crumbled
2 tablespoons dried tarragon
salt and pepper to taste
Place chicken, chicken broth, wine, mushrooms, bacon and tarragon in a crockpot on low for 4-8 hours.
If you want to thicken up the sauce you could use some cornstarch.
This is great on South Beach Surprise Mashed Potatoes.

I've done that... but don't cook too frequently with it.
