It looks like strawberry season has started so I thought I would post this recipe that I use (just ate it as a matter of fact). I would have this for more of a brunch since it makes quite a meal. Great after a good workout!!

Strawberry Pancakes (serves 2)

Pancake:

1 cup oatmeal
1/2 cup Uncle Sam's cereal (or another 1/2 cup oatmeal)
Buckwheat or WW flour if needed for consistency
Heaping half cup of ricotta
1-2 tsp Cinnamon
1 T baking powder
1/4 tsp salt
2 tsp vanilla
1 pk sweetener
4 eggs or 8 egg whites

Mix all with a hand blender. If you need to add some of the flour do so. Batter will be thick. Cook like pancakes. Makes 8.

Stawberries:

Sliced strawberries
sugar-free strawberry preserves to taste
Lime juice (optional)

Mix all and adjust sweetness to taste

Yogurt topping:

Mix plain yogurt with coconut extract and sweetener to taste.

To serve:

Place pancakes on plate, spraw with smart balance, add strawberries and top with yogurt.

We do the recipe with all sorts of toppings. Others include:

Sliced banana and walnuts
Sauted apples in SF syrup and cinnamon.

It really makes a nice brunch. Very hearty and very healthy for you.

Obviously this is a Phase II dish!!

I tried your recipe for the strawberry pancakes this past weekend, and they turned out great. Instead of making the pancake, I made waffles out of them. They are on the heavy side, so one waffle was plenty for me. I used the SF pancake syrup and the Fleischman's Olive Oil spread for my toppings instead of the strawberries. I'll do the strawberries the next time. The recipe made 6 waffles, so I froze the others to pop in the toaster for a breakfast later on.

I just whipped out my waffle iron too! I posted the recipe I used a few days ago. Again topped with strawberries and yogurt.

I forgot how much I like waffles.
