Hello Ladies. Thought I would share a recipe for Liquid Coffee Creamer that I found in my Everyday Cheapskate email newsletter. I think it's totally SBD friendly, as long as we use sugar substitute and make the nonfat version without butter. I imagine we could make this with any extract, doesn't necessarily have to be vanilla. I plan to try it with some almond extract or oil, since I have a passion for Toasted Almond CoffeeMate.
I havent' made it yet, but would love to hear a review or any comments!

Vanilla Coffee Creamer
Mix together 2 cups instant dry milk and 1-1/2 cups sugar. Add 2/3 cup boiling water and 6 tablespoons melted unsalted butter (omit butter for a nonfat version). Stir until mostly incorporated. Add 1-1/2 cups nonfat milk and two teaspoons vanilla extract, or more to taste. Blend with a hand mixer until smooth and creamy. Keep refrigerated for up to two weeks. Shake well before use.

So rewritten, the ingredients would be.....

2 c. nonfat instant dry milk
1.5 c. granular Splenda or WheyLow D
2 tsp. vanilla extract

Sounds very yummy, very all-phases SBD friendly, and economical, too!

UMM......sort of........you left out the end, (the milk), and the water.
Rewritten it would actually be.....

Mix together 2 cups instant dry milk and 1.5 cups splenda or whey low (my choice)
add 2/3 cups boiling water, stir until mostly incorporated.

Add 1.5 cups nonfat milk and 2tsp. vanilla extract. blend with hand mixer until smooth and creamy.

Well, I went ahead and made this last night. I used Whey Low D instead of sugar, and I used half vanilla extract and half almond extract, and I now have a DELICIOUS fat free SBD friendly vanilla almond coffee creamer!!

I highly recommend this for those of you that are really missing your flavored coffee.
DH even said he would use it instead of Coffee Mate which is great, because I know what's in the homemade creamer, and it's all natural!

OH, FYI, I halved the recipe since it's only good for two weeks in the refrigerator and I really only have one cup of decaf a day. Enjoy!

This sounds great. I am going to give this a try. I have a question though.....did you omit the butter all together? Or did you use smart balance or smart beat or I can't believe its not butter spray, instead? And then you used the extracts too right?

Hi! Yes, I omitted it all together. The original recipe calls for unsalted butter, so keep that in mind if you decide to use a butter substitute, I find that they can be VERY salty. Also, the more I use it, I have decided that I might just stick with the Vanilla extract next time, and not put the almond extract.......I liked it the first time, but now I'm not so sure. However, you could use any extract that you like!

I'd love to hear what you think, even though it's not my recipe.

Ooh. This sounds very interesting. I am going to definitely give this a try. I am thinking I might substitute some Davinci for the Extract and Splenda. Will let you know how it turns out.

I have been making my own creamer using Evaporated Skim Milk, Splenda and Caramel Davinci and it has been pretty good, but not quite as "creamy" as I would like, but still pretty good.

But, I am going to definitely give this a try and let you know how it works. I agree too, that halving the recipe is a good idea!
