Help me make veggie french fries!

Hello!
I love the roasted broccoli. I love broccoli raw too though so I want to see if I can "roast" other veggies in the oven with the same result as roasted broccoli. The Broccoli reminds me of fries in a way and got me thinkiing, can I roast zucchini, yellow squash, eggplant or jicama the same way? I know broc is a lot firmer, and i hesitate to roast the others because they get mushy when I stir fry them. Has anyone tried it?

I don't think you can roast jicama because of the water content.

thanks! i will try them, I was worried zucchini and eggplant would get too soft. What temp. do you roast them at Cathy?

Brussel sprouts are also AWESOME roasted. I like to mix them with the mini pearl onions and roast them. Also carrots are great roasted.

Sweet potatoes make great "fries", I julienne them, coat with a little olive oil, spread on cookie sheet and roast until just starting to get browned on the edges. I salt them immediately after coming out of the oven. They are more "limp" than a regular french fry, but you can still pick them up with your fingers!

that sounds good! I just used string beans. they were great! I will be spending some extra time in the produce aisle this week :)
