Just to let you know that I was able to make decent waffles today.

I used:
1 cup of whole wheat buttermilk baking mix (in the "organic" section of the market)
1 cup of oatmeal
extra baking powder (maybe 1 tsp)
1/4 tsp salt
2 eggs plus an extra egg white because my eggs were a bit small
1 cup milk or as much as needed to get a good consistency.
1 container (maybe 1/4 cup) unsweetened apple sauce
2 T oil (original recipe on package called for 1/4 cup so I reduced it and put in the apple sauce)
Some chopped walnuts

Add all, except the nuts, and blend with a hand blender. Stir in nuts.

I served these with strawberries and yogurt on top but you could serve them any way you want.

I was glad to see that they translated pretty well.

Lisa, what did the ingredients for the whole wheat buttermilk baking mix list as first ingredient?

Whole wheat flour was the first ingredient so I gave it a shot.

If someone was on P2 (I am P3) they may want to make it from scratch so that there are less unknowns and extra ingredients. In that case, I would probably just find a waffle recipe and use whole wheat or buckwheat/whole wheat flour nstead of white and the apple sauce to cut the oil.

Since I am P3, I am trying to find ways to incorporate some previously "normal" items back into my diet that have a South Beach flair to them.

Remember, we can have Kashi Go Lean waffles in phase 2!
