Awesome Eggplant lasgna receipe!

OMG! This was so yummy that I had to share! Don't be turned off by the list of ingredients as you probably already have everything in your pantry. Its easy as can be to make!

Eggplant:
4 eggs
1 tbsp water
1 tsp salt
1/2 tsp dried oregano
1/4 tsb garlic powder
2 medium eggplant

Tomato Sauce:
1 tblsp olive oil
2 tbsp red onion diced
2 cloves garlic chopped
1 (14 oz) can no sugar added diced tomatoes
1 (8 oz) can no sugar added tomato sauce
1/2 tsp dried basil & oregano
1/8 tsp salt
a/8 tsp pepper

Cheese filling:
15 oz low fat ricotta cheese
8 oz low fat shredded mozzerella
1/2 cup parmesan cheese
1/4 cup roasted red peppers
1 tbsp parsley
1 tbsp oregano (fresh)
1 clove garlic
1/4 tsp pepper
1 large egg

Topping:
4 oz shredded mozzerella
1 tbsp olive oil
1/2 tsp dry oregano

Preheat oven 400 degrees.

To make the eggplant: Whisk together the eggplant ingredients as above in a bowl. Trim the edges off of the eggplant, and using a peeler, peel off 2 large swaths of skin from the eggplant. Cut each eggplant lenghtwise into 6 slices about 1/2 inch thick. Dip each piece into the egg mixture, coating both sides & transfer to a vegatable coated baking shhet with sides. pour any remaining egg misture over the eggplant slices. Bake about 15 mins or until a little brown. Let cool slightly.

Turn oven down to 350 degrees.

Meanwhile, make the tomato sauce: heat the oil in a saucepan over medium heat. Add the onion & garlic and cook until soft & translucent. Add the remaining tomato sauce ingredients as above.

Make the cheese filling: Mix all the ingredients as above into a bowl.

To assemble the eggplant: Place at least 2 tbsp of the cheese mixture int he center of each eggplant slice and roll them up. Place the rolls in a single layer, seam side down, in a baking dish, and pour the sauce over the top. Cover the eggplant with the topping mixture as above. Bake for 25-30 mins until cheese browns & starts to ooze out the sides.
