does anyone freeze spaghetti squash?

I love spaghetti squash, I eat it almost every day, it's such a great base for any veggie (or egg) dish!
Cooking it is really time consuming, and as a law student time is my most precious resource! Can I put some in a freezer bag? how long will it stay good for? I want to start cooking two at a time if the cooked squash can be frozen.

How do you usually cook it? I take mine, leave it whole, piece it with a fork a few times, put it on a plate and microwave it 3-4 minutes per pound. Most of the ones we buy are about 3 lbs, so 10-12 min in the microwave with almost no real prep. I cut it open, scoop out the seeds, pull out the "threads" of squash, etc.
Actually its the ONLY way I know how to cook it, but its quick and easy!

I bake mine at 375, after splitting it in half. I would nuke it but my mom is REALLY protective of her microwave and I have a feeling she would pierce ME if something were to happen, so I generally avoid using the microwave whenever I can. Does juice come out of the holes you pierce? It usually takes about 40 minutes to bake.

I'll post the results if I freeze some.

A little bit of juice comes out, not much, but that is why I put it on a plate. Otherwise it would be a sticky mess underneath it in the microwave! And if you didn't poke holes it would probably explode! I also forgot to say that I turn it over halfway through (when I remember) and then let it sit about 2 minutes after its done before cutting. I love to use the microwave when possible to cook one part of a meal because I usually already have something else in the oven (veggies or meat or something) and usually already have at least 2 burners going on the stove too.
I'm actually kind of protective of mine too LOL. I don't let hubby use it because he never covers anything and then it splatters all over - once he burnt/sxploded chili in it and it took me about 3 hours to scrub it out!

As long as you poke holes its usually fine! I've probably done at least 100 of them like that over the years and never had a problem!

I have never had, much less cooked, spaghetti squash, so forgive my ignorance here. Would it be possible to split it and take the seeds out first? Or does it need to be cooked first? And what's the best way to get the strands out once it is cooked?

Bah hahahahahaha! OMG! ROTFLMAO! Did you have to buy a new microwave? I think my furbabies would just die if my microwave blew up like that. I bet that was fun to clean up!

For the record... I cut my squash in half, scoop the seeds out, put the halves cut-side down on a baking dish greased up with olive oil, then bake at 425 for about 45 minutes. It gives me time to prepare the rest of dinner or to hop on the treadmill. I haven't tried freezing it because there are never any leftovers! ;-)

I always split mine in half and scoop out the seeds first. But you do need a BIG knife to do this, and be very careful. Then I put it cut side down on a dinner plate, pour a bit of water in the bottom of the plate and then nuke for 8-10 min in the microwave.

I actually think it tastes a tiny bit better when oven baked, but I don't bother unless I have the time. I like cooking it in the microwave because it takes the same amount of time as the pasta I cook for the kids :)
