Who would like to share her/his favorite Spinach Salad recipe (Phase 1)?

Mine is very simple.


Baby spinach leaves, sliced red onion, grape tomatoes, sliced mushrooms, sliced almonds, balsamic vinaigrette.

I just do mine like the resturaunts usually, But I cut out what I don't like. Baby Spinach leaves, hard boiled eggs, MAYBE some Turkey bacon crumbled up (very very small amount) and some Carb1 Ranch Dressing. I don't do onions or raw toms so those are a nogo on my salads! LOL I'm such a plain jain! ruby

That recipe sounds yummy!
I am in phase 1 right now, so I can't have this yet but am counting the days!

Spinach Apple Salad with Orange Vinegarette

Spinach
a really tart apple or two
Your favorite nut (no not your better half)
I use pecans
red onion sliced really fine
Orange juice (about 1/3 cup)
Extra Virgin Olive Oil (1/4 cup)
1 tsp balsamic vinegar
orange zest
shaje it up and pour on top of the salad.
I had this on Easter and it was a MAJOR hit!

Thanks for all the suggestions. This is what I came up with:

- bunch of fresh baby spinach
- 1 boiled egg
- 1 tomato, in pieces
- a tiny bit of bacon
- bit of sliced red onion
- some crumbled goat cheese
- my own vinegrette dressing

It was delicious. It will be my lunch this week one more time.

I love to make extra toasted almonds (when I make tilapia almondine) and sprinkle them in my spinach salad, some cranraisins, a little grilled chicken...
