Oven Baked Sweet Potato Fries

Here's the Cooking Light recipe that I adapted mine from.  I add or delete some of the spices, depending on the rest of the menu.  I also cut these into regular matchstick french fry size.


Roasted Sweet Potato Fries



2 (8-ounce) peeled sweet potatoes
1 teaspoon olive oil
1/2 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon ground cloves
1/8 teaspoon pepper

Preheat oven to 425°.


Cut sweet potatoes in half lengthwise; cut each half lengthwise into 6 wedges. Combine sweet potatoes and remaining ingredients in a bowl; toss gently to coat. Place wedges on a baking sheet (do not overlap); bake at 425° for 25 minutes or until very tender.

Yield: 4 servings (serving size: 6 wedges)

I discovered the magic of sweet potato fries last fall. YUM YUM YUM. I don't know how I lived 35 years without having eaten them before. SO GOOD. Now on the rare occasion I have regular potato fries, there's just no comparison as to which is better!

We make these with just salt (we do it just like french fries - toss in oil before baking, then sprinkle with salt right when they come out the oven and are hot) We LOVE them that way!
I've also done them with "cinnamon sugar" (cinnamon and splenda) for the kids (again we put it on after cooking). We have a BBQ restaurant here that serves sweet potato fries and that how they do them - but they use real sugar of course.
