Looking for Make Ahead Breakfast

I am wondering if the recipes for the eggs/bacon made in the muffin tins are any good. I would like to make them ahead and microwave for breakfast - are they rubbery? I make breakfast each morning (eggs/bacon) for myself and hubby - as well as my 2 boys - need to cut down on time in am so that I can get on treadmill without getting up at 5am. This would be a real time saver but if they don't taste good it won't be worth it.

I love the veggie quiche cups and often make a batch for the freezer.

I know this sounds like a pain, but I was surprised to find out how easy it is to make a souffle. I saw it on "Good Eats", and it was actually quite easy and YUM. Although it will fall if you don't eat it right away, it still tastes great, and I often throw the leftover in the fridge for breakfast the next day.. heats right up in the micro. You could just make one the night before.

Thanks for checking in with me - I have so much energy that I am having a hard time going to bed at my usual time - I am getting so much done - and the timing is perfect because my youngest son is turning 11 tomorrow so there is plenty to do for his birthday. I haven't tried the burritos yet but I'll bet even my oldest son might eat one on his way to school - and he is not a breakfast eater. I'll let you know!

So do you cook the eggs and assemble the burritos and then save them to eat later in the week? Do they turn ok when you reheat??
