Looking for Make Ahead Breakfast

I am wondering if the recipes for the eggs/bacon made in the muffin tins are any good. I would like to make them ahead and microwave for breakfast - are they rubbery? I make breakfast each morning (eggs/bacon) for myself and hubby - as well as my 2 boys - need to cut down on time in am so that I can get on treadmill without getting up at 5am. This would be a real time saver but if they don't taste good it won't be worth it.

I haven't made them yet - but maggie said you can make several and keep in a plastic container and reheat them as needed and they keep all week - I'll let you know when I try them.

I made your breakfast burritos this weekend and have had them for the past two mornings. They are great. I was low on tortillas so I cut some flat bread in half and used them too. I really like them and they taste just like they are fresh made. Thanks for the recipe. I am glad to have something that is quick but taste great too.

I had a smoothie for breakfast this morning, that I assembled in the blender the night before. Even the time it takes me to pour the stuff in the blender is more time than I have in the mornings. I pulled it out of the fridge this morning, blended it for about 30 seconds, poured it into a tumbler and that was that.

1/2 C plain fat free yogurt
1/2 C skim milk
1/4 C raspberries
1/4 C strawberries
2 Tbsp. SF vanilla syrup
2 packets Splenda
1/2 cup crushed ice

This was going to be 1 C of my milk and my fruit serving for today, but my daughter tried it, liked it, and drank 1/2 of it on the way to school! I'll make a bigger batch tonight!

Thanks for the great smoothie recipe - it sounds great - I better double the batch because I know my boys will want some too!
