Someone posted on a board somewhere a recipe for zucchini hash brown recipe. I have searched and searched but still can't find it. Does anyone have it? Also, does anyone have a legal tuna and chicken salad recipe for phase 1?

I don't remember seeing a recipe for zucchini hash browns, but you could substitute zucchini for the radishes in this and it would be perfect.

Also, I found this one on line:


Hash Browns - Zucchini

(2 servings)



  • 1 cup grated zucchini
  • 2 eggs -- beaten
  • 1 Tablespoon grated onion
  • 1 Tablespoon canola oil
  • 1 dash onion powder
  • 1 dash garlic powder
  • salt and pepper to taste

Combine all ingredients except canola oil in a medium bowl. Stir until well combined.

Heat oil in a large skillet over medium-high heat.

Spread hash mixture in skillet. When brown on one side, turn and cook the other side.

I made these last night and they were delicious! I served them with a horseradish sauce (lf sour cream mixed with horseradish). Yum!

I made this tonight. YUM! It nearly didnt make it to the table because the dh and i were picking at it while the rest of dinner was cooking.

Thanks for the recipe! It's a keeper! Because of the amount of egg (you really taste the egg IMO), this would be a great way to get some veggies in at b'fast too. Norma

This one sounds good too! Thanks! I thought the other was better than real hash browns. You always have to add so much salt and pepper and onion for flavor.
