Mashed Fauxtatoes?

Ok I have 2 questions about the fauxtatoes. I made these in the past but I can't remember how. How do you all mash them? Today I used a regular masher and then my hand mixer (how i would for reg mashed taters). They never came together. It was just itty bitty pieces of cauliflower. Kind of odd. So I melted some cheese, which mixed in nicely wiht the bit of milk I used. Actually the fam loved them and raved about it, but it wasn't the desired outcome. So perhaps you could tell me what I did wrong.

Also I've been loving the oatmeal thread and wonder if we can do that here. A few of you mentioned adding bacon or cheese and stuff. HOw much of it are you adding (be specific) and at what point. Also, how long are you steaming it. I thought if you cooked the heck out of a veggie, you lost the vitamins.

I boil mine very thoroughly (about 10 minutes) and then I drain it and break it up with a fork. Then I puree it even finer with a hand blender.
