This recipe is something that I made up at the last minute because I had NO idea what to cook, and almost gave up on the diet altogether! I came up with this sauce as I was forming the meatballs and panicking because I had no idea what to put on them...Anyway, these meaurements are approximate because when I cook, I never measure, I always just eyeball everything until it looks right, so if it doesn't look right to you as you are making it, then just add what you think looks right! I served these over the Cauliflower Fauxtatoes and they were fantastic......I can't wait to try them with some ww pasta next week (and maybe some whole grain garlic bread?)

Creamy Meatballs
1 lb. lean ground beef
1 egg, slightly beaten
1/2 cup shredded or grated parmesan cheese, fresh
1/2 onion, grated (you could chop them really finely but the meatballs hold together better if you grate them)
salt and pepper to taste
1 clove garlic finely minced
1 to 1-1/2 tsp. dried oregano, to taste
1 to 1-1/2 tsp. basil, to taste
2 tsp. garlic powder (I LOVE garlic in everything)
1 to 2 cups chopped or sliced fresh mushrooms
1/2 onion, chopped
1 clove garlic, minced
1/2 cup beef broth, low-sodium
2 cups buttermilk, low-fat
oregano, basil, salt and pepper to taste (or whatever herbs you like)
1 Tbsp. cornstarch
2 Tbsp. beef broth, low-sodium
~~Mix ground beef, egg, parmesan, grated onion, 1 clove garlic, salt and pepper, the herbs and powdered garlic in a bowl. Mix together well and form into 1-inch or so meatballs (you should get about 13 or so). Broil for about 4 minutes, turn meatballs over, and broil for about 4 minutes more until done. Drain well.
While meatballs are draining, spray a pan with non-stick cooking spray (or drizzle about 1 Tbsp. olive oil) and set over medium heat. After oil heats up, add onions, mushrooms and garlic to the pan (be careful not to burn the garlic). Sprinkle with salt to get rid of some of the moisture in the mushrooms. Add the beef broth and stir together well. Let simmer for about 5 minutes to reduce the broth down by about a third. Make a slurry with the cornstarch and 2 Tbsp. beef broth and mix well so there are no lumps. Turn the heat up to medium-high and whisk in the cornstarch. Bring to a boil, and when it starts to thicken, lower the heat and add the buttermilk. Stir to bring it all together and let simmer. (Add the buttermilk a little at a time to make sure that it stays the consistency you want and doesn't get too thin). Add the meatballs to the pan and heat them up. Serve over the Fauxtatoes.

A nice green salad and maybe some steamed or roasted green beans would probably go very well with this.
This fed my family of 4 very easily and my kids loved it -- I just made baked potatoes for them.
