Tired of omelettes try this....

MAke a flam instead.
Seperate 3-4 eggs. Whip the whites into a meriange. Then beat the yolks. If you are trying to keep the fat low discard 1/2 the yolks. Gently fold yolks back into the meriange. Now in a oven proof skillet spray with pam. Now put 1/2 cup of sliced mushrooms, I like to add a bit of bacon bits, but you can also use diced ham that is allowed or canadian bacon. Now pour the egg mixture on top and place in a 350 degree oven. Bake until set. About 20 minutes. Flip out onto a place. Can be garnished with cheese. Can be served with a nice green salad for lunch time.
I love the texture of this dish and it does have a different taste from an omelette...jo
