I looked in the fridge and discovered that my mom had bought a chayote! The cookbook says they are Mexican but my mom uses them for a broth based Chinese soup. I tried the salad that is in the orange cookbook. It contains chayote, cilantro, and is dressed with salt, pepper, lemon juice, vinegar and serrano chili (I used Tabasco instead, heh)

It is pretty good! The chayote is crisp and juicy, like a slightly underripe pear and very refreshing.

Also, my mouth is on fire from the chili! *breathes hard*

I am pretty sure I have never seen jicama at the store. My mom gets chayote from the chinese grocery store.
