any good leek recipes?

Before SB, I used to *love* leek potato soup. Now, since white potatoes are The Enemy (as is beer, *sob*), I find myself not only missing it but not sure what to do with leeks, which I also really like. Any suggestions for good leek recipes, especially something that may substitute for leek potato soup?

Well its not exactly a "leek" recipe, but I use quite a bit of them in my minestrone soup - here is the recipe:

2-3 tablespoon extra virgin olive oil
3 leeks, chopped
2 ribs celery, chopped
3 cloves garlic, minced
1 tsp Italian seasoning
salt & pepper to taste
3 cups chicken broth
1 can tomatoes w/juice
2 can white beans (great northern or cannelli), drained and rinsed
4 cups Swiss chard, chopped
3 carrots, sliced
1 cup green beans, cut into 1" pieces
1 cup whole wheat pasta

Instructions
Heat the oil in a large saucepan over medium heat. Add the leeks, celery,
minced garlic, italian seasoning, pepper, and salt. Cook, stirring frequently,
for 4 minutes, or until the vegetables begin to soften.

Add the broth, beans, Swiss chard. Bring to a boil over
high heat. Reduce the heat to medium-low, cover, and simmer for
8 minutes, or until the vegetables are tender. Remove about 1/3-1/2 of soup and puree in food processor until fairly smooth. Return to pot and mix in. Add green beans, pasta, and carrots. Cover and simmer 1hr.

Serve topped with grated paremsan cheese.

Mmmm...that sounds really good. DH and I belong to a CSA (community supported agriculture) which is a farm that we pay an annual fee and get a huge helping of veggies every week during the spring/summer/fall. We haven't started up this year yet, but a lot of those ingredients are stuff we get from the farm. Except for the pasta and wine, of course.
