I am a huge fan of Paula Deen and watch her all the time on the Food Network. However, her recipes are so packed with butter and other bad stuff that I rarely make any of them or when I do I have to alter them dramatically. I saw this over the weekend though, and it is SBD-friendly. Haven't tried them yet, but I plan to!


Magical Peanut Butter Cookies Recipe courtesy Paula Deen

Difficulty: Easy
Prep Time: 15 minutes
Cook Time: 12 minutes
Yield: 18 cookies

1 cup peanut butter, creamy or crunchy
1 1/3 cups baking sugar replacement (recommended: Splenda)
1 egg
1 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.

Ooh, that sounds yummy. I've been way into peanut butter (but not overdoing it) lately. Ever since I bought some sugar free jam I've been enjoying PB&J again.

I actually saw a very similar recipe on this site when I was searching for peanut butter (the one thing I'd take with me if I were on a deserted island LOL!). The only difference was the recipe called for equal amounts of PB and Splenda (1 cup). I made the cookies - made sure it worked out to 16 cookies to each one had 1 T. of PB, so I counted each one as 1/2 of my nut serving for the day. They were delicious - but I had to bake mine a few minutes longer than suggested. And it's VERY important to remember to mash them, because they won't flatten on their own and they are very crumbly if you try to reach in the oven and smash them with a fork after they've already started baking. :>

These cookies are awesome!! I too watched this show the other day, and immediately went on the food network web site to get the recipe! They were wonderful and my kids even loved them. My husband keeps asking when I am making my next batch. Nice to have something like that every once in awhile.. makes you feel like your having a special treat!

You caught my attention when you said your kids loved it. How old are you kids? My DD is 18 months and I only give her slivers of anything I make that has Splenda in it, b/c I thought artificial sweeteners weren't good for kids. Just wondering. DH really hates it when I give her anything that has Splenda.

My 2 girls are 3 and 6. I have heard the debates about artificial sweetners too but I think everything in moderation. I might be a little less likely to do it if they were babies but I think the tiny bit they are getting in each cookie - not a big deal. They probably eat worse stuff in their McDonald's happy meals!! :)

Is the pb recipe for the first phase? It sounds wonderful...I am in my fourth day of this diet and really want to try this as a nice treat.

I hate to say it, but I tried the recipe and the cookies made the house smell great but tasted like peanut butte rolled in nutrasweet...yuk! I'm really glad many of you enjoy it though...maybe I am just too picky. I ended up eating too much peanut butter though :(
