With Green Chile Salsa
I made this today for lunch and it is SO GOOD! It's one of those, "I can't believe I can actually eat this on a diet" dishes! It's originally from The Complete Cooking Light Cookbook (I modified it slightly to be more SB-friendly)...
Goat Cheese Quesadillas
1 cup goat cheese
1 cup shredded reduced-fat Monterey Jack cheese
1/4 cup chopped fresh cilantro
1 Tablespoon chili powder
1 (15 oz.) can red beans, rinsed and drained (I used black beans)
8 (8 inch) whole wheat tortillas (I used 4 WW La Tortilla Factory tortillas-- they're huge and I'll save what I didn't eat today for tomorrow)
Cooking spray (I always use olive oil)
Preheat oven to 350 degrees. Combine first 5 ingredients; spread 1/2 the tortillas with cheese mixture and top with another tortilla. Press gently to secure.
Place quesadillas on a baking sheet coated with cooking spray (or olive oil), and cover with foil. Bake at 350 degrees for 25 minutes or until cheese melts. Serve with Green Chile Salsa. Garnish with cilantro sprigs, if desired.
Green Chile Salsa
1 1/3 cups diced seeded tomato
1/4 cup diced onion
2 teaspoons fresh lime juice
1 teaspoon minced fresh cilantro
1 (4.5) can chopped green chiles, undrained
Combine all ingredients in a bowl. Serve with quesadillas.

These sound delicious! I love anything mexican. Just be careful to buy low fat goat cheese!

Thanks, Karen! These are SO GOOD! I ate leftovers for lunch today and I added a little bit of avacado to the salsa and it was fab!!!
Yes, I got l/f goat cheese. I eat a lot of goat cheese (the baked portobello mushrooms with goat cheese and pine nuts from the SB Cookbook is a staple here!) and I searched and searched for a good l/f goat cheese-- and the one I use is BETTER than the original. I think I'm getting to where full-fat stuff just doesn't taste as good anymore. Pretty amazing! ;-)
