Crispy Dijon Pork Chops

I don't remember if I originally got this recipe here, but I thought I'd post it anyways - we all really like these. Kind of reminded me of Shake N Bake (but way better!) My 7 yr old ds said they were "da bomb" (which I *think* is a compliment??)

1 cup whole-wheat breadcrumbs
1 Tablespoon melted butter substitute
2 Tablespoons Dijon Mustard (divided)
2 Tablespoons freshly grated parmesan cheese
1 Tablespoon chopped parsley
6 boneless pork loin chops
Salt and pepper to taste

Preheat the oven to 350 Degrees. In a small bowl, mix the bread crumbs, butter, and 1 T of the mustard, parmesan cheese, and parsley. Season the pork chops with salt and pepper. Spread the remaining dijon mustard on each side of each chop and place the chops on a baking sheet. Divide the breadcrumb mixture among the chops and pat them into the mustard on both sides. Bake the chops until they are fully cooked and the breadcrumbs are nicely browned, about 20 - 25 minutes.

(I turned them over about halfway through to get the bread crumbs browned nicely on both sides)
