I found this recipe in our local Sunday paper, and wanted to share it with you. I have not made the potato salad yet, but would like a review on it from someone who has tried it.
SWEET POTATO SALAD
2 pounds sweet potatoes, peeled and cubed.
1 cup Hellman's mayonnaise
1/2 cup Sugar Twin Brown Sugar
1 cup chopped walnuts
1/2 cup raisins (may omit or substitute with dried fruit of your choice)
Dash of cinnamon or 2 Tbls. sugar free maple syrup
Place the peeled potatoes into a large saucepan with enough water to cover. Bring to a boil, and cook until tender. Drain, and cool slightly.
In a large bowl, combine the mayonnaise and brown sugar. Mix to combine. Stir in the sweet potatoes, walnuts and raisins until coated. Add the walnuts, raisins and cinnamon to taste. Cover and refrigerate. Serves 6.
