This looks interesting..what do you think of it, CL's? Not sure what the stance is on FF Evaporated Milk...?! I know Cream Cheese is a personal choice...Looks like maybe a occasional dessert? With Strawberries in season and on sale now, I figured it was worth a shot...they woul dbe goon in place of the raspberries! Got this from www.Wylerslight.com

Wyler's® Light Berry Cheese Parfaits
Next time you’re asked “What’s for dessert?”, our Berry Cheese Parfait recipe is the perfect treat.


1 envelope unflavored gelatin
1/4 cup cold water
8 oz light cream cheese
1 envelope Wyler's Light Pink Lemonade
12 oz fat-free evaporated milk
2 cups frozen raspberries
1/2 cup no sugar added raspberry spread

directions
Sprinkle gelatin over water. Cook over low heat until gelatin dissolves. Combine light cream cheese and Wyler’s Light Pink Lemonade. Gradually add evaporated milk and beat until smooth. Add gelatin mixture and stir until blended. In a separate bowl combine raspberries and raspberry spread. Spoon 1½ tablespoon of berry mixture into stemmed 6 oz glasses. Top with 1/2 cup of cheese mixture. Cover and chill for 3 hours. Spoon remaining berry mixture over tops of parfaits.

Fat free evaporated milk is absolutely fine and legal in all phases.

I visited the website and found that this recipe is for six. We served it to company tonight for dinner and it was a big hit! Perfect for the hot weather we are experiencing.

I will definitely make it again and maybe try to substitute a little ricotta for a portion of the cream cheese. The big flavor comes from the cream cheese and the lemonade mix. It's really a treat.
