Pasta-less Lasagna???

Hi All!
Just wondering -- is there a recipe anywhere for pasta-less lasagna?? Even tho' I'm getting ready to move into P2, pasta is a weakness, and I'd prefer not to have to deal with it.
If nothing exists, I guess I may just have to get creative and invent such a dish. Better yet, I'll have DH invent one -- he's much more gifted in the area of cooking than I.

I substitute slices of eggplant or zucchini for the pasta in lasagna.
Yep, I do the same thing, mostly with eggplant. I use my exact lasagne recipe I have always used, but I just use roasted eggplant slices in place of the noodles. Works really well - and I actually PREFER this to our old lasagne. The other day I was thinking of trying it with roasted or grilled portabello mushroom caps instead of the eggplant as they have a similar texture. Would get a little pricey though to do a whole lasagne that way, but if I try it I will let you know!

Mmmmm - using the mushrooms does sound yummy! Maybe, to keep the cost down, you could make the bottom layer out of the mushrooms and the next layer out of zucchini or eggplant. I have been on phase II for a few weeks now, but I haven't tried any WW pasta yet, because I also have a weakness for pasta, and I'm afraid I'll overdo it. But pastaless lasagna just might fill that void.

I made a pasta-less lasagne the other night with roasted eggplant slices, ground turkey, sliced baby bellas and diced red peppers, ricotta with fresh basil, an egg and a package of frozen spinach and some grated romano and lowfat mozzarella. It was really good. DH said it was like an eggplant parmesan/lasagne combo.
