Unstuffed Cabbage Crockpot Casserole

  • 1 pound ground beef
  • 1 small onion -- chopped
  • 4 cups chopped cabbage
  • 1 green pepper -- chopped (omitted)
  • 1 cup cooked brown rice 
  • 1 cup water (I used chicken broth for more flavor)
  • 6 ounces tomato paste
  • 15 ounces diced tomatoes -- undrained
  • 2 tablespoons vinegar
  • 1 tablespoon sugar (I used 2 packets splenda)
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder


Brown beef and onion in skillet; drain well. Combine all ingredients in crockpot. Cover; cook on low for 4-5 hours.


Casserole was very good, but next time I will eat with "Beano" if you know what I mean ;<0

I had planned to make this in the crockpot last week, but the day got away from me and I never got it in. Since the cabbage I was going to use had already been stir-fried by dh, I figured I'd make it in the pasta pot on the stove. I doubled the recipe, so the pot was pretty full, but it turned out really good. There were things in the recipe that I changed/skipped, but it didn't make a difference in taste. I, also, used chicken broth and omitted the green pepper, and I know I didn't use Splenda so I must have used sugar (just didn't double that particular ingredient). I'm really not too keen on artificial sweeteners, and even though Splenda is made with sugar, I'd rather use the real thing, just less of it. Plus, no one in my house, myself included, cares for the taste/aftertaste of Splenda. It's way too sweet for us. I really need to check into the Whey-Low products soon.

I made this over the weekend only I made a few changes. I didn't have tomato paste so I added extra tomatoes. I was out of brown rice so used some whole wheat pasta noodles instead. I also added a can of Light Red Kidney beans. I used the splenda and the chicken broth. I also put in the green peppers and a hot pepper. It was so good. I have been eating on it all week.
