Since the move, TG and I both need packed lunches 5 days a week (7 for him when he works weekends, poor baby...) and we're both already sick of salads, sandwich fillings on salads, dinner leftovers, etc...
And then I realized something...this time of year is prime picnic-season! Food Network and other recipe-warehouses are pulling out all kinds of great summer picnic recipes, so I'm thinking......why not turn them into lunchbox recipes for all year-round? Picnic recipes are designed to travel well, stay in bags if there's no fridge available, etc.
So, if you're stuck for ideas for away-from-home meals, try plugging "picnic" into your favorite recipe search engine...I'm interested to hear what other people turn up!
So far I've got:
Gingered Vegetable Stir-Fry (microwaveable)
Caesar Salad Wraps
Moroccan Carrot Sandwiches with Green Olive Tapenade
A variety of stuffed-veggie options
Pack-and-Pour soups
And it goes on and on...lunch may no longer be the least-favorite meal of the day ;-)

LOL, it's not an "official" acronym...in this case, it stands for Tattoo Goo, which is a sticker on the back of my boyfriend's truck and has turned into a sort of nickname for him ;-)
