A Big Hit for Little Hands

Here's a nice, easy menu that Munchkin (she's 5!) made for dinner tonight with only a little help with the stove...I bought her a cookbook of her own this week, as we test out the recipes, I'll post the winners for others with mini-cooks in the house!

Birds in a Nest with Blankets

4 slices whole wheat bread
4 eggs
4 slices deli cheese
Salt and pepper to taste
Smart Balance or cooking spray

Use a cookie cutter to cut a circle (or other shape) out of the center of 4 slices of whole wheat bread. While the kids are doing this, the grown-up should heat a skillet over medium heat and melt the butter or spray the pan. You can toast the cutouts seperately if your mini-cook doesn't eat them first.

Put the bread into the skillet, and crack 1 egg into each hole and season with salt and pepper (the book suggests having mini-me's who are too young to do this step themselves keep track to make sure you don't miss any, that went over well with mine). Cover the pan with a lid or foil. Give the eggs a couple of minutes to cook through, then uncover and place one slice of cheese over each egg. Recover loosely and turn off heat. Leave on the burner for the cheese to melt. Serve immediately.

These turned out to be really cool open-face egg sandwiches, and with the cutouts from the middle they're much lower in carbs than the traditional breakfast sandwiches!

She also made us fruit and yogurt parfaits for dessert, the two went well together.

She was all excited about cooking, and wanted to play restaurant, so here's some other ideas she came up with for Kids Cooking Night:

We got out my party tablecloths and dishes to dress up the table.
We served the fruit and yogurt parfaits in martini glasses so you could see all the layers.
The cookbook has some cool illustrations, so she set it out on the table as a "menu".

We had a lot of fun with this tonight, I hope some of you will too!
