Maggie's Make-Ahead Breakfast Burritos

My hubby and I are in a hurry in the mornings. About once a week, I make several Breakfast Burritos at once, and store them in a plastic container in the fridge. They keep for days! If not for these Breakfast Burritos, I would not get breakfast into my husband! He loves these, though. Nutritious, too - they've got your protein, veggies and grain all in one. :)
Phase 2 Breakfast Burrito
One whole-wheat tortilla filled with -
scrambled egg
chopped Canadian bacon, lean lunchmeat ham, or cooked turkey bacon (crumbled or chopped)
shredded lite cheddar cheese
sautéed veggies such as onion, bell pepper, mushrooms, chopped broccoli
salt and pepper to taste
In a saucepan, sauté the chopped veggies that are going into the burritos (mainly, chopped onion, green pepper, red pepper, chopped broccoli florets - varies) until *just* soft, onion becoming clear. I use either trans-free spread or a little bit of olive or canola oil to sauté. In the same saucepan, leaving the veggies and oil in, add the eggs (about 9-10 of them for the batch I make - about 1.5 eggs per Burrito), and scramble them as they cook. Add salt, pepper, whatever seasonings you like. I cook until lightly scrambled - fully cooked, but not "hard" cooked.
Remove from heat. Add the chopped pre-cooked turkey bacon or chopped lean lunchmeat; stir in. When cool enough to handle (still warm but not hot), I scoop some of the scramble onto one side of a whole-wheat tortilla. Add a sprinkle of shredded cheese (about 1 T. or so), and begin rolling, folding ends in as you go. Roll firmly. Stack into Tupperware. Seal tightly. Store in fridge.
In the morning, put a Breakfast Burrito on a plate, heat in microwave for about 35-45 seconds. Ready to go! They taste very fresh, perfect. Not overcooked. Not runny, the tortilla isn't icky, it's just really good! They keep all week in the Tupperware. I make enough for weekdays....about 5 days' worth at once. So, I know they definitely keep well for at least up to 5 days this way.
