I found a can of black beans in my cupboard but I have no idea how to use them. I was hoping someone could link me to a recipe, perhaps a blackbean dip? I remember reading about black bean brownies too.

Hi Nicole,
I love black beans! I add them to green salads and to the chicken salads I make that have all kinds of chopped veggies, vinaigrette and canned white meat chicken. I also have a GREAT side dish using black beans. I will look for it and post it here when I find it. So keep a look out....it's a good one!
Here you go Nicole:
1 tablespoon olive oilMEXICAN BLACK BEANS
The beans can be topped with grated Monterey Jack cheese, then covered to melt.
4 garlic cloves, finely chopped
1 large jalapeño chili, seeded, chopped
1/2 teaspoon (generous) ground cumin
2 15-ounce cans black beans, rinsed, drained
1 14 1/2-ounce can low-salt chicken broth
Fresh lime juice
Chopped fresh cilantro
Heat oil in heavy large saucepan over medium-high heat. Add garlic, chili and cumin and sauté 30 seconds. Add beans and broth and cook 5 minutes, stirring occasionally. Coarsely mash beans with potato masher. Continue boiling until thick, stirring frequently, about 10 minutes. Season to taste with lime juice, salt and pepper. Transfer to bowl. Sprinkle with cilantro and serve.
Serves 6.
Honest? You didn't like the brownies? I tried them and thought they were pretty good. I melted some natural peanut butter and drizzled it over the top, and I was surprised how much they tasted like brownies - but it had been a real long time since I'd eaten any kind of bread like dessert, so that could have had something to do with it. I did have to up the Splenda vs. the suggested amount, though.

We love the brownies too - and my kids LOVE, LOVE them. I made them into cupcakes (the "cake" recipe not the brownie one) and took them to dd's preschool for snack one time and all the 3-5 yr olds gobbled them up! I used a low-fat cream cheese frosting.
But for black beans, another thing to do is make refried beans. We actually just had refried black beans last night. Its not the "real" way (as I obviously don't use lard!) But I heat some canoloa oil (like 2 T) in a skillet, add onion, garlic, salt, pepper. Sautee til cooked, then add 2 cans black beans and start mashing with the potato masher. You just keep mashing and cooking until they are creamy. If they get dry I add a little water. You can add chili powder and some cumin too for flavor.
